Have Some Sunday Sweet Potato Pie :)

Happy Sunday!!  I hope everyone is having a good one, like I have :)   It’s still cool here in the TOL, and after I returned from church I was really, really in the mood for baking.  But not just baking any ol’ thang… I had a taste for some sweet potato pie!  Needless to say I had to run to the store because I had nothing at home to prepare it with, not even sugar! lol..

I don’t have much of a sweet tooth and honestly I don’t eat fruit pies at all… But this here, has always been a staple that I grew up with as a child and still am in love with as a big girl ;)   What can I say… Add a spoonful of vanilla icecream and it brings out the fat kid in me!

Ladies and gents, just try this recipe of MINE out and let me know what you think of it.  It’s the bomb in my opinion… I just love this stuff. Recipe is available when you read on below…

Ingredients:

4 to 5 sweet potatoes (medium to large in size)

1 tsp. ground nutmeg (add more to taste)

Two sticks of butter

1 3/4 cups of granulated sugar

4 eggs

2 tbsp. of flour

Two sticks of butter

1/2 cup of whole milk

9″ deep unbaked pie crust Xs 2

dash of vanilla extract

Instructions:

First, your going to wash then boil your sweet potatoes in a large pot until soft.  Allow 5 to 10 minutes to cool.  The skin of the potatoes should peel off very easy with your fingers.  Place the peeled potatoes in an over-sized bowl, and mash to a smooth consistency.  Add your sugar, nutmeg, vanilla and softened butter to the bowl and mix all ingredients together very well.  At this point you can feel free to take a small spoon and taste your mixture to see if you want to add any more nutmeg for your acquired taste.  Then add the flour and eggs to the ingredients in the bowl and mix as well.

Pour into your two pie shells, discarding or freezing your remaining pie filling.  Bake in a preheated oven at 350 degrees, for 2 hours or until set and lightly browned.  Make sure your pies are completely cool before cutting up… And enjoy!!!
